For Fine art portraits I know that some fine art photographers practically swear by larg fomat cameras, but those are quite expensive.

Like steve_n_r said it depends on the type of photography you want to do. I do mostly still lifes and I usually just use my bed or our dining room table or some other mostly flat surface. I have made some fine, even award winning, still lifes just in my bed with a flashlight.
